Annual Truffle Menus
La Toque is famous for it's annual truffle menus. Of course our favorite Holiday season around here is truffle season.
Fresh white truffles,"Tuber magnatum", come into season for a few months in the fall. In a good year they are unforgettable. Unfortunately too often they are simply not worth the price, recently they've been pushing 2500 dollars a pound and of mediocre quality. Nature willing, when we deem them great they are occasionally available as a supplement to the prix fixe menu, regardless of their price.
As the fresh white truffle season winds down after Thanksgiving, the first Black Winter Truffles, "tuber melanosporum", begin to ripen. Every January the best truffles of the season appear. In addition to the regular menu we offer an All Black Truffle menu with black truffles in every course. Our
20th annual Truffle Menu will debut on Friday January 11th, 2002. Season permitting the truffle menu should be available nightly well into February. You may click on the links below to see some of last years menus.
We do not use "truffle oil" at La Toque. Cooking with truffle oil is simply a crutch, a way to save money and stretch "flavor". Indeed the integrity of so called "truffle oil " is now in serious doubt. There is no substitute for real truffles.
